Today, I am bringing you a delicious and beautiful fish entree! I adore love salmon, and knew that it would be perfect to make to use the my herbs and oils from out sponsors. You can easily substitute fresh herbs in place and will have terrific results! Citrus season is also strong this time of year, and I knew blood orange was perfect for the salmon with it's rich hew and fresh flavor. I love the flavor of cilantro and citrus and knew that this salmon would be a winner with that combination!
Like I said, this was another perfect opportunity to use a product from our sponsor, Gourmet Garden. Gourmet Garden was kind enough to send participants 17 different herb products (stir-in pastes and lightly dried) for this challenge. I opted to use the lightly dried herbs and the paste in my salmon, and it was amazing! I also used Cilantro Cottonseed Oil from Acala Farms. I was excited to learn more about cottonseed oil during this event, and absolutely loved the product! Acala Farms Flavor-infused Cottonseed oils are light bodied and bright flavor profiles. They have a high smoke point and are heart-healthy. The oils are also gluten-free, kosher, pesticide-free and rich in antioxidants.
My family loved this meal and the sweet, spicy and herb flavors were fantastic!
This weekend we are celebrating my birthday in the Dells. Kellen is pumped for more swimming and I am looking forward to a fun weekend with out family! My parents, sister and nephew are joining us, and I know the boys will have an incredible time!
Ingredients
1 cup fresh blood orange juice
1/2 Tbl Sriracha
Pinch of Salt
1 tsp garlic paste or one clove of garlic minced (I use Gourmet Garden)
1/2 Tbl cilantro Gourmet Garden Light Dried Cilantro or 1 Tbl chopped fresh cilantro
1/4 cup light brown sugar
2 tsp Acala cilantro oil (you can use olive oil)
1 - 1 1/2 lb fresh salmon fillet
Salt and Pepper
Instructions
In a sauce pot add all ingredients besides the oil, salmon, salt and pepper. Bring to a slow simmer and reduce till the glaze has a consistency of thin maple syrup (about 15 minutes). Make sure the you stir often to avoid burning and ensure an efficient reduction.
Pre-heat oven to 350 degrees. Line a 8x8 baking dish with foil. Rub salmon with oil and lightly season with salt and pepper. Brush the salmon liberally with the glaze. Bake for 15 to 18 minutes brushing the salmon with glaze liberally at the after ten minutes and lightly right before it is removed from the oven. Remove from the baking dish, cut into slices and serve.
