#HotSummerEats Cherry Chipotle Grilled Ribs

A few slabs of ribs on the grill screams summer to me! It is pretty common to see if at our cottage in door county when hanging out with my family. My Dad makes a killer ribs recipe, and I am always worried to make them at home in fear that they will not be nearly as good. 

On trick my Dad uses is a soak in unsweetened apple cider or hard cider. I don't know all the ins and outs as to what it does to the ribs, but is sure is delicious! 

For participating in #HotSummerEats I was able to get a bottle of  sauce from NotKetchup. I have previously worked with NotKetchup in other blogging events and they are always generous to let us try the different flavors- the ones I have tried are so good!. I decided to try the Cherry Chipotle flavor (there are 4 amazing flavors to choose from: Blueberry White Pepper, Cherry Chipotle, Spiced Fig, and Smoky Date) because I knew it would make an incredible BBQ sauce for a rack of ribs.  The sauce on it's own is amazing, but I added a little BBQ, garlic and mustard to add even more flavor to my ribs, but the sweet and spicy flavors are the main focus of flavor in this hearty dish. 

My entire family loved these saucy ribs and we ALL licked our fingers clean after this meal. The sauce is a great twist on traditional BBQ, but still gives the cravable flavors to the ribs- these were definitely up there with my Dad's recipe for great ribs!

Instructions

1 1/2 cup NotKetchup Cherry Chipotle
1/2 cup of your favorite BBQ sauce (I like Stub's)
2 cloves garlic, minced
1 tsp dijon mustard
24 oz hard or unsweetened  cider
2 fulls baby back rib racks
Salt and Pepper
1 tsp smoked paprika


Instructions

Cut the silvery membrane of the bottom of the racks of ribs. If not removed it can become chewy or rubbery.

Soak ribs in the cider for least 4 hours turning at the halfway point.

Pat dry and season with salt, pepper and paprika. In a medium bowl, mix NotKetchup, BBQ, garlic and mustard and reserve for later.

Heat grill to 325 degrees. Grill for about 40 minutes flipping at the halfway point. At the end of the grilling time, brush bottom side with the NotKetchup sauce and grill 2 min. Flip, repeat and grill for an additional 2 minutes. Give both sides a final brush with sauce and remove from grill. Rest the ribs for a few minutes, slice to divide the rack portions and serve.
