I have seen this recipe floating around Pinterest and a few blogs I follow for awhile and only now have gotten around to making it. I literally put this together in 5 minutes and into the oven it went. Ron, Kellen and I absolutely loved this meal. The chicken was so juicy and tender and the potatoes cooked perfectly. We were both surprised that everything cooked evenly and was done at the same time. All of the recipes I saw have slightly variations and we made a few of our own. I used 2 packets of Italian seasoning mix (we like a little extra punch) and decreased the amount of butter. The result was great and I can't wait to make this meal again! Since Kellen goes to bed around 7:30 a quick meal is very appreciated so he is able to eat with us before he tuck in for the night.
Less thank a week till he turns 1.....eeek!
Ingredients
3 generous cups red potatoes, quartered
2 cans cut green beans (you could use frozen)
1-1 1/2 lb chicken breasts (4 chicken breasts)
3/4 stick butter, cut into pieces
2 Italian dressing seasoning/mix packets
Instructions
Pre-heat oven to 350 degrees.
Line one side of the pan with green beans. Cut potatoes up. Line opposite side of pan with the potatoes. Line the chicken breasts down the middle of the baking dish. Cut butter up and layer over the green beans, potatoes and chicken. Sprinkle Italian dressing over the entire pan. Cover with foil. Bake 1 hour.
I found this page on Pinterest and tried it last night. So simple and so tasty! I will definitely be making this again. Thanks for posting it!
ReplyDeleteSo happy you liked it!! It is one of our favorites too :)
DeleteBoneless, or bone in breast?
Deletei use boneless
DeleteMade this and yes it turn out wonderful. :) as easy as it gets. Thx
DeleteLoved it! Tried it on the recommendation of a friend who found it on Pinterest....YUM. It's a keeper!
ReplyDeleteyay!
DeleteTried this last week and enjoyed it very much. My husband raved over this all week. So we are having it again tonight!
ReplyDeleteMine did the same when i first made it! yum!
DeleteI make this at least once a week
ReplyDeleteI love it too!
DeleteI have made this twice already, so good and easy. I made it for myself and it was great for left overs at work the next day! :) -Lisa
ReplyDeleteI am so happy it is a hit!
DeleteDoes it have to be red potatoes?
ReplyDeleteI like to use red potatoes for this recipe.
ReplyDeleteCan you use a metal nonstick pan?
ReplyDeleteI don't see why you couldn't
DeleteCan I use a cup of Italian dressing. Liquid. We cant use butter.
ReplyDeleteI think that would work. My co-worker subbed in olive oil and used the seasoning packet and said it turned out great. I would not use a lite or fat free.
DeleteDo you empty the can of green beans?
ReplyDeleteyes, drain the can of green beans.
DeleteCan you use fresh green beans ?
ReplyDeleteAbsolutely! I would do a quick blanch before baking, but that step could be skipped if you want a little crunch to them.
Deleteboneless breasts or on the bone?
ReplyDeleteI use boneless, but bone would work- just adjust cooking time
DeleteCould I substitute pork chops for the chicken? Picky hubs doesn't eat "bird" meat.
ReplyDeleteAbsolutely! I think pork chops would be delicious.
DeleteJust made this for picky nieces and nephews. They loved it! I used olive oil instead of butter and added carrots. Thanks!!!
ReplyDeleteawesome!!! Love the idea to add carrots!
DeleteDo I have to cover with foil? I'm out 😒
ReplyDeleteI have not tried it without foil, but I am sure you could. I would just watch to make sure the cooking time is accurate.
ReplyDeleteSince I discovered this recipe on Pinterest, I have made it almost every other week. It is always a hit
ReplyDeleteI am so happy you found it! It is one of our favorites!
DeleteDo you think I could use asparagus instead of green beans?
ReplyDeleteabsolutely! I would use raw over canned/frozen
DeleteDo you think I could use asparagus instead of green beans?
ReplyDeleteI don't see why you couldn't. I am not sure on that the texture will be like with an hour cook time. Might be a bit mushy.
DeleteLove this dish! I put the dry seasoning mix in salt shaker so I could get an even sprinkle. Worked out wonderfully!
ReplyDeleteAwesome idea!!
DeleteCould I use drumsticks with this recipe ?

ReplyDeleteIt probably will not need to cook as long. I would make sure my potatoes are on the small side and use a meat thermometer to temp the chicken. Since the thighs are a bit smaller I would check around 40 min for a temp and go from there.
ReplyDeletecould I use corn instead of beans? would the time be adjusted?
ReplyDeleteYou can use corn. I am not sure on cooking time, but I don't think so because the largely is due to the chicken.
DeleteI have used 1 can of green beans and 1 can of corn. Cooked it for the hour and turned out great. I have used the recipe almost every week. My husband always take the left overs to work the next day for lunch. Thanks for sharing this recipe!
DeleteTrying this dish out tonight hope its good if so I will be cooking it again.
ReplyDeleteCan this be used as a freezer meal?
ReplyDeleteI have never tried it as a freezer meal. I think you could, but you will want to adjust cooking times. I think you also will get more liquid in your pan and it will change the texture of your veggies.
DeleteHi! Does the chicken have to be thawed or can the chicken be frozen?
ReplyDeleteI have never tried this with frozen chicken. I think your cook time would be different and it might have a lot of liquid. I would also worry about how evenly the chicken would cook. I don't think it would turn out as well.
DeleteI've used frozen chicken many times and it turned out great. I use frozen tenderloins.
DeleteIf I used frozen green beans, would I need to add any extra liquid besides butter
ReplyDeleteNo. You might have extra liquid because of the frozen veggie.
DeleteCan we use tenderloins. Will that change the cook time.
DeleteThe chicken tenderloins are smaller and your cook time will likely be shortened for the chicken. However, the potatoes will likely need to entire time to be tender.
DeleteMaking this right now for dinner I added shallots to mine I had one that needed to be used so why not hope it's good
ReplyDeleteMaking this right now for dinner I added shallots to mine I had one that needed to be used so why not hope it's good
ReplyDeleteWhat size baking dish do you use?
ReplyDelete9x13
DeleteI stumbled upon this recipe by accident and I am glad I did! Made it for dinner this evening and it was a HUGE hit! Had it put together and in the oven in a matter of minutes. Very easy to make and absolutely delicious! Thank you for posting this recipe. Looks like it will become a mainstay around my house.
ReplyDeleteAny low carb options to replace the potatos?
ReplyDeletehmmmm....i have not tried anything different....maybe a different veggie like cauliflower or broccoli?
DeleteI was thinking the same thing..I'm going to try squash..cut up in pieces!
DeleteDo you have to use that seasoning or are you able to put your own kind of seasoning on it ?
ReplyDeleteI think you could use something else if you like! I have not tried that, but I am pretty confident there would be no issue.
DeleteWe have made it the “traditional” way but we also love using Webers seasoning- the Garlic Parmesan in place of the Italian. It’s so good!
DeleteInstead of canned green beans could i use frozen
ReplyDeleteInstead of canned green beans could i use frozen
ReplyDeleteHow do I make my chicken not end up dry!?
ReplyDeleteDo I split the chicken breasts or cut them in half,I'm making 6 servings
ReplyDeleteDo I put each breast in whole or split them.
ReplyDeleteMade this today , I used mrs dash instead of the Italian seasoning , and then I also added Italian dressing on the chicken . Very flavorful! Potatoes were somewhat dry, so I added butter to them ! Excellent dish !
ReplyDeleteI want to try this recipe but my husband isn’t a big fan of green beans. What other vegetable would be good?
ReplyDeleteCan I use a metal throw away pan with this. Would it change my cook time or temp?
ReplyDeleteSalted or unsalted butter?
ReplyDeleteDo you cut the chicken breast?
ReplyDeleteI like to add Afew Alice of green onions as well.
ReplyDeleteSlices not Alice
DeleteLove this meal!! Was so easy to make!!
ReplyDeleteHas anyone tried this in a air fryer oven?
ReplyDeleteThis is a great recipe. Question, has anyone laid rice on the bottom of the pan and the juices then soak into the rice?
ReplyDeleteI am wondering on cutting up the chicken to dice size along with the potatoes. Would I cook for less time? Looking at doing this after football practices.
