Strawberry Rhubarb Margaritas #CookoutWeek

Cookout Week is almost over and I only have one more recipe to share with you after today! It seems like this week flew by, and I have loved getting a chance to look at everyone's creations (not to mention develop some serious food envy).

Another big thanks to Pintertest Kitchen for putting this together! Click here to read more about #CookoutWeek and our killer giveaway (grill, mixer, delicious products- even duck!).

In Wisconsin, strawberries are in season and there is nothing better than fresh strawberries from a local farm or roadside stand. Rhubarb is also still going strong, and I felt is was a perfect combination to turn into a margarita. We love making margaritas and have dappled in a few different flavors at home, but this combination is my favorite. I love the sweet strawberries with the tart rhubarb flavor combination. The additional tartness from the limes and sharp tequila makes a perfect drink. The strawberry rhubarb syrup is perfect to make non-alcoholic version with a little white soda or limeade for the kiddos. As you can see the syrup requires you to strain, and I love to reserve the unused strawberries and rhubarb to make baked goods (think in place of applesauce).

Out heat wave continues in Wisconsin (105 heat index today!), and I think these will be on the menu after the kids go to bed! Stay tuned for my final #CookoutWeek recipe tomorrow, and don't forget to enter the giveaway!

Ingredients
(for 1 drink)

2 oz silver tequila
2 1/2 Tbl Strawberry Rhubarb Syrup (recipe below)
2 oz Margarita mix
Ice
Lime Wedges and Strawberries, for garnish

Strawberry Rhubarb Syrup
1 lb strawberries, quartered
1 1/2 cup chopped rhubarb
2/3 cup sugar
1 cup water
1 tsp lemon zest

Place all ingredients in a small pot. Simmer for 15 minutes. Remove from heat. Strain using a fine mesh strainer and a spatula. Use the spatula to push the liquid from the fruit. Cool and pour into a jar.

Store in fridge up to 1-2 weeks.

**Pulp from the fruit can be saved to use in baking recipes. Stay tuned for a recipe next week using the strawberry rhubarb pulp!**

Instructions

Fill and 8 oz glass 1/2 - 2/3 full with ice. Add tequila and syrup.  Top with margarita mix. Stir and garnish with a lime wedge and strawberry.
